ASPARAGUS RECIPES TO GET YOU COOKING
My trips to the grocery store make me smile these days. So much fresh, seasonal produce is back on the shelves. The days of carrots and potatoes are over! I found some wonderful asparagus recipes to get you cooking.
Adding vegetables to your table ups your fiber and vitamin intake, and it’s especially healthy when you lower your “bad” carbs. Use these recipes as way to eat right and enjoy delicious, well-prepared food!
***Le Creme de La Crumb‘s Lemon Chicken and Asparagus Foil Packets look divine! One thing that I know is that lemon is a perfect partner for asparagus. I love the idea of wrapping these up and placing them on the grill.
***Yummy Healthy Easy throws together Creamy One-Pan Chicken Asparagus Pasta in one dish. It’s easy prep and easy clean-up. At 365 calories per serving this one is on my menu for sure!
***Damn Delicious wraps asparagus in proscuitto which is simply delicious, thin-sliced, Italian bacon. In fact the only two ingredients are asparagus and proscuitto, so that makes it quite simple. I imagine this appetizer dish tastes great!
***Cooking Classy tosses asparagus with tomatoes to create Asparagus, Tomato and Feta Salad with Balsamic Dressing. You could pair this with grilled chicken, or eat a larger serving as the main dish. The dressing sounds absolutely delightful!

If you have children you may feel reluctant to put asparagus on your menu, but I say “go for it”! Let your kids help prepare the meal and that gives them ownership in the food. They will be much more adventurous with their meal when they prepare it!
