SPRING SALAD RECIPES
Salad is something I eat every single day. Not only do I love them, but they are good for me and simple to make. Generally I make a large salad at the beginning of every week, and then when lunch time comes it’s so quick to toss it into a bowl and enjoy!
Spring Salad Recipes:
***Cooking Classy’s Thai Salad with Peanut Dressing is loaded with veggie yummy-ness and good-for-you ingredients. The unique dressing is surprisingly good. I would have never thought to combine peanut butter, lime juice and ginger!
***Cafe Delites mixes up some of my favorite flavors in her Grilled Cajun Chicken Salad. It is spicy, fresh and hearty!
***I have a friend who introduced me to strawberries in salads, and although I was at first unsure, once I tasted it I was hooked. I think it is the sweet and salty combination that really works! Shugary Sweet‘s version looks amazing, and I love the added twist of feta cheese!
***Culinary Hill goes Mediterranean with her chopped salad. Is it me, or is a chopped salad always better than a regular salad? Those small pieces always taste so good!
***Pie and Ebby’s Loaded Veggie Salad brings in chickpea and black beans to up the protein value in this meatless salad. The beans also work to keep you fuller longer.
***How Sweet Eats rang my number by placing chicken, bacon and avocado on one plate. This California combination is this girl’s favorite! It’s a classic updated with the addition of Rosemary.
Salads are the perfect meal for spring and summer! Preparing a large salad at the beginning of the week makes daily meal prep easy. Knowing that I am majoring on veggies for at least one meal per day makes me feel like I am doing something right!
Be sure to introduce your kids to salads as well. I always found that if I avoided calling it a “healthy” meal they loved it. All they need to know is that salads taste great!
