DELICIOUS ROASTED VEGETABLE RECIPES
It is that time of the year when I find it hard to eat right. The produce in the store leaves a lot to be desired, and the cold nights make me want something heartier than salad.
The answer to the problem is roasted vegetables!
Roasting brings out the flavor in veggies like you would not believe. Add to that how simple and quick they are to prepare and you know why I love them so!
One of my favorites to roast is cauliflower, and potatoes are a close second, although I try to keep the potatoes in my diet to a minimum. Carbs keep my weight higher than I like it to be!

One thing I love about roasting veggies is that they are so simple in every way. All you need is some salt and pepper, and some oil. You are pretty much set for a wonderful side or main dish!
Remember that when you are are chopping your veggies you will need to cut them a similar size in order to cook them evenly. And keep in mind that veggies with similar texture cook best together. This achieves a consistent texture throughout. For example, carrots will take longer to cook than zucchini simply because of their hardness.
