8 LAYER BEAN DIP: A RECIPE
With the Superbowl just around the corner I have yummy snack recipes on my mind. Even though my team (The Broncos) is not going this year, I will definitely be cheering a team on! Let me share my 8-Layer Bean Dip Recipe with you…it’s definitely a keeper!
This is another one of my “a little bit of this and a little bit of that” recipes, which is to say you can customize this to your liking. If you do not like green chilies simply leave them out. If you love avocados toss in an extra one. I have a friend who makes a similar dip and she adds a packet of taco mix to the sour cream. It adds flavor and changes it up a little bit. You can also change the type of cheese used. Monterey Jack or Pepper Jack would be great!
Another thing about this dip is that it makes a good portable lunch item or a picnic dish. Make it at the beginning of the week and take it to work all week. One suggestion would be to leave the tomatoes and the avocados on the side so they do not get mushy or turn brown while in the fridge for a few days.

Ingredients
- 16 ounce can refried beans
- 1 smashed avocado
- 1 cup sour cream
- 4 ounce can chopped green chilies
- 3.8 ounce can sliced olives
- 1/4 cup chopped red onion
- 1/2-1 cup chopped tomatoes
- 1-1/2 cup shredded sharp cheddar cheese
- 1 bag tortilla chips

Instructions
- Starting with the refried beans, simply layer the ingredients in order, ending with the cheese on top. Serve with tortilla chips.
