PEACHES AND CREAM MUFFINS
My kids love when I make muffins, and Peaches and Cream Muffins are certainly one of my favorite things to bake!
Almost all of my muffin recipes contain fruit of some kind, and when fresh is in season I go for it. Not only can you make these for breakfast tomorrow morning, but you can also freeze them for future use. Double (or triple!) the recipe and keep them on hand for busy mornings. Your family will thank you for it!

In all honesty, I can not remember the origins of this Peaches and Cream Muffin recipe. Did a friend give it to me? Maybe. Did I cut it out of a magazine? Possibly. Did I pin it on Pinterest? No. I have had this one in my recipe box long before Pinterest was on the scene.
Here in Colorado peaches are a big crop. In fact, we even have a festival to honor the tasty fruit! Peach wine is popular as is all manner of sweet and savory menu item! It is a fun way to spend a weekend!
One thing that I loved to do when my kids were younger was to bake with them. Great memories are created when mixing and measuring and eating batter is happening.
Peaches and Cream Muffins are a great way to use this season’s yummy fruit, but you can also use canned or frozen peaches. Simply make sure that any peaches you use are ripe and juicy and soft. Do not use underripe peaches because they will not soften enough during baking.

Muffins

- 1 egg
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 2 TB milk
- 1-1/2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup chopped peaches (fresh, frozen, or canned)
Ingredients

- Preheat oven to 375 degrees. Stir together egg, sour cream, milk, and oil in a bowl until combined. Add flour, sugar, powder, and salt. Mix until combined. Fold in peaches. Spray a muffin pan with non-stick spray. Spoon the batter evenly into the muffin pan. Place muffins in preheated oven and bake for 18-22 minutes, until muffins are lightly browned. Please note that the muffins tend to brown much more quickly on the bottom, so pay attention to avoid burning.
