SPINACH AND BACON SALAD: A RECIPE
Let me fill you in on a little secret: I am one of “those” bacon lovers!
I love it by itself. Added to recipes it’s perfect. I love it on it’s own. Wrapped around other foods always improves those foods. Did I mention that I love it independent of other foods?
Yes, I did!
One of my favorite spring-time recipes is Spinach and Bacon Salad. It is loaded with good things like spinach and mushrooms and onions. Paired with yumminess in the form of parmesan cheese and bacon, this one is a keeper. This salad is both salty and sweet, and I often take to gatherings to share. It almost never yields leftovers, and I share the recipe often. File this one under “favorites” for sure!
Will your kids eat this salad?
My kids love this salad. I have found that if I do not announce the health value of a dish, my kids take to it right away. Whenever I try to sell them on something healthy and good for them, it is a struggle to get them to eat it. To be honest, I find this true even with my adult children.
Since the kids are going to gobble this one up, let them help prepare it. Trimming the spinach leaves and chopping the mushrooms are great beginner kitchen skills to learn. Remember that if they make it they will eat it!
Pair this salad with grilled chicken or pork chops, and of course you have the makings for a delicious and nutritious meal.
If you are not sure that you will be eating all of this salad in one sitting, be sure leave the veggie ingredients, the bacon and cheese, and the dressing in separate containers. That way you will not ruin any leftovers with sogginess. I like to prepare the ingredients for this salad on Sunday, and then eat it for lunch several times during the week. To be honest, this salad gets hidden in the back of the fridge on purpose so no one else will find it!

- 1 5 ounce bag fresh baby spinach, ends trimmed
- 1 head romaine lettuce, cut into pieces
- 1/3 cup red onion, minced
- 4 ounces mushrooms, sliced
- 1/2 cup slivered almonds
- 1/2 cup Parmesan cheese
- 6 slices bacon,cooked and chopped
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup vegetable oil
- 1/4 cup red wine vinegar
- 3 TB. sugar

- Combine the lettuce, spinach, red onion and mushrooms in a large bowl. Combine almonds, cheese and bacon in a small bowl. Combine the dressing ingredients in a small bowl. Combine all ingredients and serve. If you are planning on leftovers, only combine the amount you will be eating. You will want to keep the salad, the bacon ingredients, and the dressing separate until serving time. Enjoy!
